Flavored vinegars are just handy things to have around the kitchen. We use them to vary the flavors in salad dressings. This recipe for raspberry vinegar is one of our favorites.
| 3 | Cups | Frozen raspberries |
| 4 | Cups | White vinegar |
| 1/2 | Cup | Sugar |
Rinse the berries, set them on paper towels and allow them to dry. Place them in a 6-cup jar. Set aside.
In a medium saucepan, combine the sugar and vinegar. Heat over low heat, stirring constantly, until the sugar dissolves. Do not boil. Pour the vinegar mixture over the berries. Cover the jar tightly. Let it stand for 48 hours at room temperature.
Strain the vinegar through a fine mesh strainer lined with coffee filters. Transfer the liquid to a clean jar and cover tightly.
