
"You have to feel the knives to understand." Each knife has a 440A high carbon stainless steel blade which is "taper ground" and has been shaped on Carisolo's grinding wheels by Peter Maestri, master knife grinder. The blade has been cross-buffed and the edge has been hand-honed. The handle is American black walnut, or industrial rosewood. In "finishing" the stock, the knife grinder smooths the handle and rivets, grinds the shape of the cutting edge to a custom-designed bevel, buffs and hones the edge to extreme sharpness. Then, a preserving finish of tung oil is hand rubbed into the wood to further protect and beautify the handle. Solid and durable a set can last a lifetime.
